When I grocery shop I try to use all fresh ingredients. Now that my schedule has turned insane and will likely get crazier, I need to take it easy on myself and start to incorporate a few more frozen items and pantry items into the rotation. Trader Joe’s has a lot of prepackaged veggies and frozen foods that I like so a trip was due. I found and pinned a kale fried rice recipe a few months ago and decided to throw that together tonight. Easy breezy
4 cups of water
1/2 teaspoon of salt
4 cups of kale
1 bag of Trader Joe’s vegetable fried rice
1/2 of medium onion chopped fine
3 cloves of garlic minced
2 tablespoons of grapeseed oil, divided*
soy sauce to taste
hot pepper sauce to taste
Bring water and salt to a boil and add kale. Cook until tender. About 10 minutes. Drain and set aside. When cool enough, squeeze excess water out and set aside.
While kale is boiling heat 1 tablespoon of oil on medium high heat in a skillet or wok. Add onion and cook until soft…about 5 minutes. Add garlic and cook for 30 seconds (don’t over cook)
Add kale to skillet and cook for a couple of minutes
Make a circle in the middle of the pan and add tablespoon of oil then add fried rice to skillet
Add soy sauce and cook until golden brown and heated through.
